Frankie Basket
A crunchy and flavorful basket loaded with fresh vegetables, creamy spreads, and healthy toppings for a satisfying bite. A fun, wholesome twist on the classic street-food Frankie — served in a crispy tortilla basket that’s as pretty as it is delicious.
Shape & bake the baskets
Preheat your oven to 200°C (180°C fan). Lightly brush both sides of each tortilla with olive oil. Press each tortilla gently into a large oven-safe bowl or muffin tin to form a basket shape. Bake for 10–12 minutes until golden, crisp, and holding their shape. Remove and cool on a wire rack.

Toss the paneer cubes with chaat masala, cumin powder, a squeeze of lemon juice, salt, and pepper. Let it sit for 5 minutes. Heat a non-stick pan over medium-high heat and sauté the paneer for 3–4 minutes, turning until golden on all sides. Set aside.

In the same pan, add a tiny drizzle of oil. Toss in the sliced capsicum, onion, and corn kernels. Stir-fry on high heat for 3–4 minutes until slightly charred at the edges but still crunchy. Season with salt and a pinch of chaat masala. Remove from heat.

In a small bowl, mix the hung curd with a pinch of cumin powder, salt, and a squeeze of lemon juice. Stir until smooth and creamy. Keep the hummus ready in a separate small bowl for layering.
Assemble the baskets
Spread a generous layer of hummus on the base of each crispy tortilla basket. Add a spoonful of the seasoned hung curd on top. Layer with the stir-fried vegetables, sautéed paneer, fresh cherry tomatoes, and diced cucumber.

Finish with a handful of fresh coriander and mint leaves. Squeeze a little lemon juice over the top and sprinkle a pinch of chaat masala for that final street-food punch. Serve immediately while the basket is still crispy!

- Swap paneer with tofu for a vegan version that works just as well.

- Roasted chickpeas make a great crunchy topping instead of (or alongside) paneer.
- Use spinach or rocket leaves as a base layer inside the basket for extra greens.
